Garlic Parmesan Root Vegetable Fries

A great way to get your children to eat some vegetables

Ingredients
- 2 large carrots
- 2 parsnips
- 1 sweet potato
- 2 Tbsp of vegetable oil
- 1/2 cup of Parmesan cheese
- 1 1/2 Tbsp of garlic powder
- 1 tsp of pepper
- 1/2 cup of chopped fresh parsley
- 1/2 tsp of salt
Instructions
- peel vegetables and cut into into lengths (like fries)
- coat vegetables with oil
- combine remainder of ingredients and mix thoroughly with cut vegetables
- pour ingredients onto a baking sheet (spread around so that they cook evenly)
- cook at 400 degrees for 15 to 20 minutes
Notes
- Don't be afraid to substitute other vegetables such as beets, and yams
