Ingredients
  1. 2 large carrots
  2. 2 parsnips
  3. 1 sweet potato
  4. 2 Tbsp of vegetable oil
  5. 1/2 cup of Parmesan cheese
  6. 1 1/2 Tbsp of garlic powder
  7. 1 tsp of pepper
  8. 1/2 cup of chopped fresh parsley
  9. 1/2 tsp of salt
Instructions
  1. peel vegetables and cut into into lengths (like fries)
  2. coat vegetables with oil
  3. combine remainder of ingredients and mix thoroughly with cut vegetables
  4. pour ingredients onto a baking sheet (spread around so that they cook evenly)
  5. cook at 400 degrees for 15 to 20 minutes
Notes
  1. Don't be afraid to substitute other vegetables such as beets, and yams
